Ingredients
- • 2 large "brinjals"
- • 2 Tbsp (30ml) "canola oil"
- • 1 Onion (Finely Chopped)
- • 2 cloves "garlic" (copped)
- • 300g "beef mince"
- • "salt" and milled "pepper"
- • 1 packet (50g) tomato paste
- • 1 can (400g) chopped and peeled Tomatoes
- • ½ Cup (125ml) "beef stock"
- • 1 Tbsp (15ml) "worcestershire sauce"
- • 8 sprigs fresh thyme or 4 sprigs rosemary
- • pinch sugar
- • 2 "salad tomatoes" (sliced)
- • 1 large potato (peeled & thinly sliced)
- • fresh basil (for serving)
Instructions
- 1.) Thinly slice ½ a brinjal and set aside
- 2.) Cube remaining brinjals into 3mm cubes
- 3.) Heat oil in a pan & saute onion until golden
- 4.) Add brinjal cubes & cook until well browned
- 5.) Stir in garlic & fry for a minute
- 6.) Add "beef mince" & brown well "season"
- 7.) Stir through tomato paste, cook for a minute until sticky & add canned tomatoes
- 8.) Add stock, worcestershire sauce, herbs & sugar
- 9.) Simmer for 5min
- 10.) Spoon into a medium casserole dish or 4 small pie dishes
- 11.) Top with overlapping slice of Tomato, Potato & sliced brinjal. Dizzle with "oil"
- 12.) Bake at 200°C (392°F) for 15-20 minutes or until "golden"
- 13.) Garnish with "basil" just before serving
